What the suppression system diagram is for
It shows the hazard, the nozzles and their coverage, the pipe runs, the detection and the release. An inspector uses it to answer whether the nozzles still point where the design put them and whether the hazard beneath them is the one the design assumed. On a kitchen line that is a question about where the fryer is today; in a server room it is about how the racks were rearranged. Neither question can be answered without the diagram, which is why a system with no diagram is a finding in itself.
Dry chemical, and why it is the most commonly neglected
Dry chemical is cheap, effective and unforgiving of neglect: the agent cakes, the nozzles block with grease, and the cylinder loses pressure quietly. It is also the system most often installed by somebody else, over a tenant's equipment, and therefore most often absent from the building's schedule. When a fire contractor takes on a building, the kitchen hood system is the one to go looking for rather than the one to wait for.
